George Koikos

(Georgio) is a well-established and very popular Tallahassee icon and restauranteur with an impressive career spanning five decades.
His culinary training began with some of the top chefs in Europe, and in 1966 he moved from Athens, Greece to Tallahassee, Florida. He opened his first restaurant "The Spartan Restaurant & Caucus Rooms in 1969 at the Duval Hotel (which later moved to 220 S. Monroe across from the county courthouse), and then followed its success with a string of successful and fondly remembered restaurants such as Brothers 3, Brothers 3 by the Sea (in Panacea), Country Inn BBQ, the Surf & Turf, and Torreya Grill.
Over the years he and his wife and partner, Karen, have employed countless Tallahassee residents and college students - one time having over 300 employees on payroll at multiple establishments at the same time. His dedication to his guests and employees is unsurpassed, and his personal attention to every detail at all levels of operation of his establishments is the key to his success. "
Trust is the name of the game for the quality and consistency of the food, the service, and the overall dining experience" - a rule that has served him well through an illustrious career. George is well known for personally greeting guests and visiting every table each evening to oversee his guests' dining experience. A testament to his regard by his staff is impressive - many of them have worked for the Koikos family for 20 years or longer.
Georgio's is the Koikos family's latest successful venture which was established March 4, 1994 at 3425 Thomasville Rd. The second Georgio's restaurant opened on March 8, 2010 is located at 2971 Apalachee Pkwy (formerly Torreya Grill). With the help of his wife Karen and their three daughters: Helena, Katerina, and Niki, and his brother Jimmy - one or more family members are always on the premises - a genuine family business.
George's first cousins, Jimmy and Nicky, own The Bright Star restaurant in Bessemer, Alabama.

Executive Chef Grant Beane

is a Culinary Arts graduate from the Johnson & Wales University in North Miami Beach. His local culinary history began with running his first kitchen as chef in Tallahassee's own Charley Mac's in the 1980's. After a stint working in California's Napa Valley wine country and later working for celebrated Miami chef, Mark Militello, Chef Grant was welcomed into the Koikos family enterprise, and has been the executive chef of Georgio's for the past fifteen years - attaining the honor of receiving his first "
five hat" rating by former food critic Ashby Stiff, of the
Tallahassee Democrat.

Chef Grant is currently the executive chef at both Georgio's locations in Tallahassee, Florida.
